Ingredients
 

  • 1 cup soaked green moong dal
  • 4-5 green chilli
  • 1 inch ginger
  • 1 tsp cumin seeds - jeera
  • ½ tsp ajwain
  • Pinch of hing
  • ½ cup coriander leaves
  • 2 tbsp water or as required to grind thick batter
  • Salt to taste
  • ½ tsp black pepper powder
  • Water for steaming
  • Serve with peanut oil and achar masala

Instructions

  • Wash and soak green moong dal into slightly hot water for 3-4 hrs.
  • Remove water with sieve and dal into mixture jar. Then add green chilli, ginger, cumin seeds, ajwain, hing, coriander leaves, and 2-3 tbsp water.
  • Grind dal into a smooth and thick paste.
  • Now, whisk the batter for 5 minutes till it becomes light and fluffy.
  • Then add salt and black pepper. Mix well.
  • Now in a deep bottom vessel (big patili) add 3 cups of water and bring to a boil.
  • Meanwhile, take one plate or thali (equal or more radius of patili) and spread the prepared batter with a slightly wet hand on the back side of the thali. Spread thin layer and only on the middle part, leaving the edges.
  • When water comes to a boil, put this plate on it. Keep the batter side down. It should take 6-8 minutes to well cook.
  • Allow it to cool for a while. Cut into pieces and spread peanut oil and achar masala on it. serve immediately.
  • Enjoy this delicious, healthy hot panori.

Notes

  • soak moong dal in slightly hot water to reduce its soaking time.
  • do not add more water while grinding the batter.
  • The consistency of batter should be thick.
  • make a thin layer of batter on the plate.
  • steam panori on high-medium flame. do not steam it on low flame
