Ingredients
 

For batter

  • 1 cup gram flour - besan
  • 1 cup fine rava
  • 1.5 cup buttermilk
  • Salt to taste
  • ½ tsp turmeric powder
  • Pinch of hing
  • 3 tbsp water or as required

For besan suji chilla

  • 1 cup batter
  • ½ cup chopped onion
  • ¼ cup chopped tomatoes
  • 2 chopped green chilli
  • ¼ tsp ginger paste
  • ½ tsp red chilli flakes
  • ½ tsp ajwain
  • 1 tsp oil + oil for making nashta
  • ½ tsp cumin seeds
  • ½ tsp mustard seeds
  • Some curry leaves
  • ¼ tsp baking soda
  • ½ tsp lemon juice
  • Some white sesame seeds

For besan suji dosa

  • 1 cup batter
  • ¼ tsp baking soda
  • ½ tsp lemon juice
  • Chopped onion
  • Chopped tomatoes
  • Some coriander leaves
  • Red chilli powder
  • Chaat masala
  • Black salt
  • Oil for making dosa

Instructions

Making batter

  • In a mixing bowl, add besan, rava, salt, turmeric powder and hing. Mix well.
  • Add buttermilk gradually and make a thick batter and pouring consistency of batter.
  • Rest for 15 minutes or until the rava absorbs water well.
  • Batter is ready. divide batter into two equal parts.

Making besan suji chilla

  • In a mixing bowl, add 1 cup of batter.
  • Then add chopped onion, tomatoes, green chilli, ginger paste, red chilli flakes and ajwain.
  • Now in a pan, add oil, mustard seed, cumin seeds and some curry leaves. sauté and add tadka into batter.
  • Add baking soda and some lemon juice. Mix well.
  • In a pan, spread some oil and sprinkle some white sesame seeds on it.
  • Then add batter and spread it evenly.
  • Cover and cook
  • cover and simmer for 5-7 minutes or until the base gets cooked well.
  • now flip over and cook base for 3-4 minutes.
  • Enjoy besan suji chilla with tomato ketchup.

Making besan suji dosa

  • In a mixing bowl, add 1 cup of batter.
  • Then add baking soda and lemon juice to it. mix well. add water if the batter is thick.
  • Heat a tawa. Pour a ladle full of batter. Spread it in a circular direction to make it to thin dosa.
  • When the upper surface of the dosa becomes dry then Spread some oil on it.
  • Then sprinkle chopped onion, tomatoes, and coriander leaves on it.
  • Add red chilli powder, chaat masala and black salt to a bowl. Mix well and sprinkle masala on the dosa.
  • When the dosa becomes crispy, fold it and serve hot with chutney or tomato ketchup.

Notes

  • The proportion of besan and rava should be equal.
  • Use fine rava for nashta.
  • The mixture should have a slightly thick but flowing consistency.
  • Cook nashta on low-medium flame.
