Ingredients
 

For Pavbhaji

  • 2 tbsp butter
  • 1 tbsp oil
  • 1 tsp jeera
  • 1 medium size chopped onion
  • 3 tbsp kashmiri red chilli garlic paste
  • 1 tsp kashmiri red chilli powder
  • ¼ tsp turmeric powder
  • 2 tbsp pavbhaji masala
  • 3 medium size chopped tomatoes
  • Salt to taste
  • 2 medium size chopped capsicum
  • 5 medium size boiled and mashed potatoes
  • ¼ cup boiled green peas
  • 2 tbsp grated beetroot
  • 1 cup hot water
  • ½ tsp garam masala
  • 3 tbsp butter
  • 1 tsp lemon juice
  • Some coriander leaves

For Tawa pulao

  • 1 tbsp butter
  • 1 tbsp oil
  • 1 tsp cumin seeds
  • 1 medium size sliced onion
  • 3 tbsp kashmiri red chilli-garlic paste
  • 1 cup shredded cabbage
  • 1 medium size chopped capsicum
  • 3 medium size chopped tomatoes
  • ¼ cup boiled green peas
  • Salt to taste
  • 2 tbsp pavbhaji masala
  • 1 tbsp water
  • 3 cup boiled rice
  • 1 tbsp lemon juice
  • Some coriander leaves
  • Serve with butter roasted ladi pav

For kashmiri red chilli garlic paste

  • 4 soaked kashmiri red chilli
  • 4-5 garlic cloves
  • Water as required

Instructions

Making pavbhaji

  • In a pan, add butter, oil, and cumin seeds. Sauté for a minute.
  • Now add chopped onion and cook it till the onion becomes translucent.
  • Meanwhile, in a mixture jar, grind soaked kashmiri red chilli, and garlic cloves with the required water. Grind it into a smooth paste. Red chilli garlic paste is ready.
  • Add chilli-garlic paste into the pan and sauté till oil separates from its sides.
  • Now add, red chilli powder, turmeric powder and pavbhaji masala. Mix well.
  • Then add chopped tomatoes and salt. Mix well and cook till tomato become soft and mashy.
  • Add chopped capsicum and sauté it for 2 minutes.
  • Then add boiled and mashed potatoes, boiled green peas and grated beetroot. Mix well
  • Now mash vegetables with a masher.
  • Then add 1 cup water and mix well. Again with masher mash vegetables for an even texture of pavbhaji.
  • Then add garam masala and butter to it.
  • Switch off the gas and add lemon juice and coriander leaves. mix well
  • Pavbhaji is ready to serve.
  • Heat butter in a pan, add little pavbhaji masala and coriander leaves. mix well.
  • Make a slit into pav and roast it from both sides. Serve pav with butter pavbhaji.

Making tawa pulao

  • In a pan, add butter, oil and cumin seeds. Sauté for a minute.
  • Then add sliced onion and cook till onion becomes translucent.
  • Now add red chilli garlic paste and sauté for a minute.
  • Add shredded cabbage, chopped capsicum, tomatoes, green peas and salt. Sauté on high flame till vegetables become slightly soft.
  • Now add pavbhaji masala and some water. mix well.
  • Then mash some vegetables with the help of a masher. Mix well.
  • Add cooked rice and gently mix it with masala.
  • Switch off the gas and add lemon juice and coriander leaves. mix well.
  • Serve tawa pulao with curd and papad.

Notes

For Pavbhaji
  • cook the onion till it becomes translucent.
  • dry kashmiri red chilli and garlic paste gives nice color and flavor to pavbhaji.
  • addition of grated beetroot helps to give street style color to pavbhaji.
  • mash all vegetables very nicely with a vegetable masher.
  • add water to make even consistency and texture of bhaji
  • roast pav into butter will enhance its taste and make it soft.
for Tawa pulao
  • cook vegetables on high flame.
  • dry kashmiri red chilli and garlic paste give nice color and flavor to tawa pulao.
  • mix rice grain gently so it will not break down.
