In a pan, boil 2 cups of water and add fresh tuvar dana, salt, turmeric powder and sugar. Boil tuvar dana till it becomes soft.
In a mixture jar, add the white part of green garlic, fresh coconut, chopped coriander leaves, green chilli and ginger. Add little water and grind it into a smooth paste.
Add grinded paste into mixing bowl, also add coarse peanut powder, coarse white sesame powder, turmeric powder, coriander powder, cumin powder and salt. Mix well. The green paste is ready.
Heat oil in pan, add ajwain, hing and cumin seeds. Sauté for a minute.
Then add garlic paste, ginger paste and green chilli paste. Sauté it.
Add boiled tuvar dana and sauté in oil for 2-3 minutes.
Now add the green masala paste and mix well.
Add ½ water and cover and cook shak for 2-3 minutes till oil separates from the masala.
Then add garam masala, sugar, coriander leaves and a green part of green garlic. Mix well.
Switch off the flame and add lemon juice. Mix well
Serve lili tuvar nu shak with roti or paratha and salad.
