Heat oil in a pan; add mustard seeds and coriander seeds in it. Sauté for a minute.
Now add chopped garlic and sauté it.
Then add ginger paste, green chilli paste, curry leaves and hing. Sauté it.
Add turmeric powder and coriander powder and mix well.
Add chopped potatoes and mix well with the masala.
Then add 2 cup of water and cover and cook bhaji on medium-low flame for 10 minutes.
Now add green chutney, garam masala and sugar. Mix well
The potato bhaji is ready. Garnish with coriander leaves.
