Ingredients
 

For green chutney

  • 2 cup fresh coriander leaves
  • 1 cup fresh mint leaves
  • 3-4 chopped green chilli
  • 1 inch ginger
  • 6-8 garlic cloves
  • ¼ tsp hing
  • ½ tsp cumin seeds
  • Salt to taste
  • 3 tbsp lemon juice

For batata bhaji

  • 2 big size boiled and chopped potatoes
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp green coriander seeds
  • 1 tbsp chopped garlic
  • ½ tbsp ginger paste
  • 1 tbsp chopped green chilli
  • Pinch of hing
  • 7-8 curry leaves
  • ½ tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp green chutney
  • ½ tsp garam masala
  • 2 tbsp sugar
  • Some coriander leaves

Serving

  • 6 pav or buns
  • Green chutney
  • Fried green chilies

Instructions

For green chutney

  • Add coriander leaves, mint leaves, green chillies, ginger, garlic, hing, cumin seeds, salt and lemon juice into a mixture jar. Blend until smooth.
  • Green chutney is ready.

For batata bhaji

  • Heat oil in a pan; add mustard seeds and coriander seeds in it. Sauté for a minute.
  • Now add chopped garlic and sauté it.
  • Then add ginger paste, green chilli paste, curry leaves and hing. Sauté it.
  • Add turmeric powder and coriander powder and mix well.
  • Add chopped potatoes and mix well with the masala.
  • Then add 2 cup of water and cover and cook bhaji on medium-low flame for 10 minutes.
  • Now add green chutney, garam masala and sugar. Mix well
  • The potato bhaji is ready. Garnish with coriander leaves.

Serving

  • Serve spicy and sweet potato bhaji with pav, green chutney and fried chilies.

Notes

  • use of lemon while grinding chutney helps to retain its color.
  • garlic gives a nice aromatic flavor to potato sabji.
  • mash some boiled potatoes to thicken the gravy of potato sabji.
