In a mixing jar, add tomato, onion and green chili. Grind into a smooth paste.
Heat ghee in a pan. Add bay leaf, cinnamon, cloves and green cardamom. Sauté for a minute.
Then add grinded tomato onion paste and cook till oil separates from sides.
Now add red chilli powder, coriander powder, turmeric powder, cumin powder and salt. Mix well.
Then add curd and mix well with the gravy.
Now add leftover lauki water to adjust the consistency of the water.
Mix well and boil. Add lauki kofta and cover and cook for 8-10 minutes.
Then add garam masala, kasuri methi and chopped coriander leaves. Mix well.
Serve lauki kofta curry with roti, paratha, or rice.
