In a pan, boil 2 cup water and add fresh green chana, salt, and sugar. Boil green chana till it becomes soft.
Now boil 10-12 palak leaves with some water for 2 minutes. When palak leaves are boiled add it into cold water.
In a mixture jar, add boiled palak leaves, the white part of green garlic, chopped coriander leaves, green chilli, ginger, peanuts, and sesame seeds. Add little water and grind it into a smooth paste. Green masala paste is ready.
Heat oil in pan; add ajwain, hing, cumin seeds, dry red chilli, bay leaf, cloves, and cinnamon. Sauté it.
Then add chopped garlic and ginger. Sauté till it is slightly golden brown.
Add the green masala paste and cook till oil separates from it.
Then add turmeric powder, coriander powder, cumin powder, and salt. Mix well.
Add boiled green chana with water. Mix well.
Cover and cook green chana with gravy till oil separates from its sides.
Then add garam masala, sugar, coriander leaves, and a green part of green garlic. Mix well.
Switch off the flame and add lemon juice. Mix well
Serve lila chana nu shak with puri or paratha and salad.
