Ingredients
 

For chilla batter

  • 1 cup green moong
  • 3-4 green chilli
  • 1 inch ginger
  • 4-5 garlic cloves
  • ½ cup coriander leaves
  • ½ cup +2 tbsp water or as required
  • 1 tbsp gram flour
  • 2 tbsp rice flour
  • ½ tsp garam masala
  • Salt to taste
  • il for making pudla

For panner stuffing

  • 2 tbsp oil
  • ½ tsp cumin seeds
  • 1 tsp ginger paste
  • 2 chopped green chilli
  • ¼ cup chopped carrot
  • ¼ cup finely chopped capsicum
  • ¼ cup chopped cabbage
  • ¼ cup sweet corn
  • ¼ cup green beans
  • ½ cup chopped tomatoes
  • Salt to taste
  • ½ tsp red chilli powder
  • ½ tsp garam masala
  • ½ tsp black pepper powder
  • 1 cup grated paneer
  • Some coriander leaves

Instructions

Making moong chilla batter

  • Wash and sock moong for 5 hrs or overnight.
  • Now in the mixture jar, add soaked moong beans, green chilli, ginger, garlic, coriander leaves and water. grind it into a smooth batter.
  • Take out batter into mixing bowl, add besan, rice flour, garam masala, and salt.  add water if the batter is thick.
  • Cover and rest the batter for 15 minutes.

Making panner stuffing

  • In a pan, add oil, ginger paste and chopped green chilli. Sauté for a minute.
  • Then add chopped carrot, capsicum, cabbage, sweet corn, green beans, tomatoes and salt. Cook on medium flame till vegetables become soft.
  • Now add red chilli powder, garam masala, and black pepper powder. Mix well.
  • Add grated paneer and some coriander leaves. Mix well. Paneer stuffing is ready.

Making moong chilla

  • Heat a tawa and grease it with oil.
  • Lower the tawa temperature and Pour a laddle full of batter. Spread it in a circular direction.
  • When the upper surface of chilla becomes dry then spread some oil on it.
  • Flip and cook it on another side.
  • When chilla becomes slightly crisp, spread paneer stuffing on one side of chilla.
  • Fold the chilla with chutney or tomato ketchup.

Notes

  • Grind moong into a smooth batter.
  • gram flour and rice flour give binding and crispiness to moong chilla
  • Immediately serve moong chilla with green chutney or tomato ketchup.
