Moong pudla

Green moong chilla (pudla) is a healthy recipe prepared from green gram batter and grated paneer toppings. It is a nutritious meal for early morning breakfast or perhaps as a snack for kids as it supplies all the required nutrients. these chilla or pudla are savory in taste and do not need any side dish, but tastes great with tomato ketchup or green chutney.

I tried this recipe much time at home, after many trials, I learned few basic things which should be kept in mind while making moong chilla and they will always turn out perfect.

The key to making the perfect moong chilla at home are;

  • The batter has to be a medium-thick and pouring consistency hence adds water in small batches while grounding the soaked green moong beans.
  • Vegetable and paneer stuffing is completely open-ended and you can add as per your preference. but ensure that these veggies are finely chopped and do easily make nice and mushy stuffing.
  • Lower the flame and decrease the tawa temperature while spreading chilla (pudla) batter.

Ingredients
  

For chilla batter

  • 1 cup green moong
  • 3-4 green chili
  • 1 inch ginger
  • 4-5 garlic cloves
  • ½ cup coriander leaves
  • ½ cup +2 tbsp water or as required
  • 1 tbsp gram flour
  • 2 tbsp rice flour
  • ½ tsp garam masala
  • Salt to taste

For panner stuffing

  • 2 tbsp oil
  • ½ tsp cumin seeds
  • 1 tsp ginger paste
  • 2 chopped green chili
  • ¼ cup chopped carrot
  • ¼ cup finely chopped capsicum
  • ¼ cup chopped cabbage
  • ¼ cup sweet corn
  • ¼ cup green beans
  • ½ cup chopped tomatoes
  • Salt to taste
  • ½ tsp red chili powder
  • ½ tsp garam masala
  • ½ tsp black pepper powder
  • 1 cup grated paneer
  • Some coriander leaves

Instructions
 

Making moong chilla batter

  • Wash and soak moong for 5 hrs or overnight.
  • Now in the mixture jar, add soaked moong beans, green chili, ginger, garlic, coriander leaves, and water. grind it into a smooth batter.
  • Take out batter into mixing bowl, add besan, rice flour, garam masala, and salt. add water if the batter is thick.
  • Cover and rest batter for 15 minutes.

Making paneer stuffing

  • In a pan, add oil, ginger paste, and chopped green chili. Sauté for a minute.
  • Then add chopped carrot, capsicum, cabbage, sweet corn, green beans, tomatoes, and salt. Cook on medium flame till vegetables become soft.
  • Now add red chili powder, garam masala, and black pepper powder. Mix well.
  • Add grated paneer and some coriander leaves. Mix well. Paneer stuffing is ready.

Making moong chilla

  • Heat a tawa and grease it with oil.
  • Lower the tawa temperature and Pour a ladle full of batter. Spread it in a circular direction.
  • When the upper surface of the chilla becomes dry then spread some oil on it.
  • Flip and cook it on another side.
  • When chilla becomes slightly crisp, spread paneer stuffing on one side of chilla.
  • Fold the chilla and with chutney or tomato ketchup.

Notes

  • Grind moong into a smooth batter.
  • gram flour and rice flour gives binding and crispiness to moong chilla
  • Immediately serve moong chilla with green chutney or tomato ketchup.
