Ingredients
 

For Bajri ni rotli

  • 2 cup water
  • Salt to taste
  • 2 cup bajra flour
  • 1 tsp oil
  • Dry flour for dusting

For dahi tadka

  • 1 cup curd
  • 4 tbsp oil
  • ½ tsp cumin seeds
  • Pinch of hing
  • 2 dry red chilli
  • Some curry leaves
  • 1 small size chopped onion
  • 2 chopped green chilli
  • ½ inch ginger pieces
  • 8 chopped garlic cloves
  • ¼ tsp turmeric powder
  • 1 tsp kashmiri red chilli powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp kasuri methi
  • Salt to taste
  • Some coriander leaves

For bharela marcha

  • 15 medium size green chilli
  • 3 tbsp oil - to cook flour
  • ¾ cup besan
  • Salt to taste
  • Pinch of hing
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp sugar
  • 1 tbsp lemon juice
  • ½ cup water or as required
  • 4 tbsp oil - for chilli fry

Instructions

Making bajra roti

  • In a pan, add water and salt. mix well and bring water to boil..
  • When water starts to boil, lower the flame and add flour mixture in it. mix well with rolling pin.
  • Switch off gas. Cover and steam dough for 2 minutes.
  • Now add flour mixture into large pan and knead into smooth dough. The dough should be smooth and soft. add little hot water if dough is not properly bind.
  • Now take a medium size ball and flatten it out between your palm.
  • Then place it on rolling board and dust some dry flour on it to prevent from sticking while patting it.
  • now pat gently with one hand and roll it slightly with rolling pin,.
  • furthermore, place the roti on hot tawa. press gently and cook all the sides.
  • serve super soft bajra roti with dahi tadka

making dahi tadka

  • In bowl, add 1 cup curd, whisk it and make it smooth.
  • Now, in a pan add oil, cumin seeds, pinch of hing, dry red chilli and some curry leaves. sauté it.
  • Then add chopped onion, green chilli, ginger and garlic pieces. Sauté till onion become translucent.
  • Now lower the flame, add turmeric powder, kashmiri red chilli powder, coriander powder, garam masala and kasuri methi. Sauté it.
  • Then switch off gas and cool down tempering slightly.
  • Now add curd and mix well.
  • Dahi tadka is ready.

Making bharela marcha

  • In a bowl, add besan, salt, pinch of hing, turmeric powder, coriander powder, sugar and lemon juice. Add water gradually and make thin batter.
  • Then in a pan, add 3 tbsp oil and prepared besan batter. Stir with rolling pin and cook till flour comes together and leave sides of pan.
  • Takeout cooked flour into bowl and cool down slightly.
  • Now make a slits into green chilli and remove its seeds and veins. Stuffed chillies with stuffing.
  • Then heat 4 tbsp oil in pan, add chillies and fried it on high-medium flame till it become crispy from both the sides.
  • Serve tasty bharela marcha with bajra roti.

Notes

For bajra roti
  • The proportion of water and flour should be equal.
  • Add flour gradually and mix it with a rolling pin.
  • Switch off the gas and cook flour for 1-2 minutes into steam.
  • When flour is slightly hot, combine it and make it smooth.
  • Press cooked flour with flour giving it stretchiness and binding.
  • Cook roti on medium-high flame.
For Dahi fry
  • Whisk dahi and make it smooth.
  • Sauté masala in the oil gives a nice flavor and color to dahi fry.
  • Before adding dahi, Switch off the gas and cool down tempering slightly.
For Bharela marcha
  • Cook besan mixture till it leaves the sides of pan and form into a lump.
  • Fry chilies on high flame.
