Ingredients
 

Bhaidku premix

  • 1 cup small grain rice
  • 1 cup green moong dal
  • 1 cup bajra flour
  • 1 cup jowar flour

For bhaidku

  • 1 cup bhaidku flour
  • 2 cup buttermilk
  • 2 cup water
  • 3 tbsp ghee
  • 1 tbsp jeera
  • ½ tsp ajwain
  • 2 tsp white sesame seeds
  • Pinch of hing
  • Some curry leaves
  • 1 tbsp chopped green chilli
  • 1 tsp ginger paste
  • ½ cup chopped capsicum
  • ½ cup chopped carrot
  • ½ cup green peas
  • Salt to taste
  • ½ cup chopped tomatoes
  • ½ tsp turmeric powder
  • 1 tsp red chilli powder
  • Some coriander leaves

Instructions

Making bhaidku premix

  • In a pan, add small grain rice and green moong dal. roast slightly and takeout into the plate.
  • Then in a pan, add bajra and jowar. Roast slightly and take out into a plate.
  • Cool down the roasted grain mixture and grind it into a coarse flour. (refer to video)
  • Bhaidku flour or premix is ready. Store it in air-tight container.

Making bhaidku

  • In a mixing bowl, take 1 cup of bhaidku flour. Add 2 cup buttermilk and 2 cup water in it. Mix well and soak the mixture for 15-20 minutes.
  • Now in a pan, add ghee, cumin seeds, ajwain, sesame seeds, hing, and curry leaves. Saute it.
  • Then add chopped green chili and ginger paste. Saute it.
  • Now add chopped carrots, capsicum, green peas, and salt. Saute it and cook vegetables till it becomes slightly soft.
  • Add chopped tomatoes and saute them till it become soft.
  • Then add turmeric powder and red chili powder. Mix well.
  • Now add the soaked bhaidku flour mixture into the pan. Stir continuously till the mixture become slightly thickened and start boiling.
  • Cover and cook bhaidku on low flame for 15-20 minutes or till it is properly cooked.
  • Garnish with coriander leaves and serve hot.

Notes

  • Roast grains on low flame till they become slightly crunchy.
  • Grind grains into a slightly coarse mixture.
  • Store bhaidku mix in an air-tight container.
  • Soak the mixture in water and buttermilk mixture, which helps to fasten the cooking process and avoid lumps in the cooked mixture.
  • Cook the bhaidku mixture on low flame.
