It is a traditional Gujarati recipe with special bhaidku flour, vegetables, and regular spices. Bhaidku flour is slightly coarse and made with 4 different grains: rice, green moong dal, bajra, and jowar. It is an easy, tasty, and more importantly healthy one-pot meal. it is an ideal morning breakfast meal or can also be served for lite lunch and dinner with curd and pickle with it. Do try this!

The key to making tasty Gujarati bhaidku at home are
  • Firstly, bhaidku premix is a combination of four grains i.e small-grain rice, green moong dal, bajra, and jowar. I roast all grain slightly so it will become crispy and easily grind into a coarse flour.
  • Store bhaidku premix or flour in an air-tight container for 6-8 months or more in the refrigerator.
  • I soak bhaidku flour in a buttermilk and water mixture. Soaking bhaidku flour helps to fasten its cooking process and avoid lumps while cooking the mixture.
  • I add some vegetables like carrots, peas, capsicum, and tomato. You can add vegetables of your choice to make bhaidku more nutritious.
  • Lastly, bhaidku tastes great when served hot. Once it is cool down adjust its consistency by adding hot water as required.
