I have also included a simple, market-style frankie masala that is easy to make, store, and adds an authentic street-food flavor to the dish.

The frankies have a delightful crunch along with a slightly spicy and tangy taste that makes them truly irresistible. This dish can be served as a filling breakfast, a lunchbox option, or a tasty evening snack. The best part is that it is ready in just 12–15 minutes using prepared tortilla rolls. Do give this recipe a try and enjoy homemade street-style frankies at home!
Tips for Making Street style frankie
- Homemade tortillas: I made the tortillas using equal proportions of maida and wheat flour. Wheat flour keeps the tortillas soft for a longer time, while maida helps make them thin. Store-bought tortillas are usually made only with maida, but homemade ones are slightly healthier. I also added curd to the dough, which helps make the tortillas softer. The tortillas are rolled thin, prepared in bulk, and stored in the freezer, where they stay good for up to one month.
- Frankie masala preparation: Frankie masala is easy to prepare using regular spices. It is a market-style masala with a good shelf life. With this masala, aloo patties and salad can be prepared quickly within minutes.
- Final assembly: While preparing the frankie, roast the tortilla on a high flame until it becomes slightly crisp. After assembling the frankie, roast it again lightly to get a crispy outer layer. Serve immediately for the best taste.

- Roll the tortilla thin; do not roll it thick.
- Half-cook the tortilla sheet; do not cook it completely.
- Store the tortillas in a zip-lock bag in the freezer.
