Crispy Wheat dosa recipe | wheat uttpam recipe | how to make instant dosa and uttapam

An instant and healthy variation of dosa made with wheat flour, fine rava, and curd. These are crispy and tasty, and like regular dosa you can easily shape them. It is the perfect dish for that unplanned morning or dinner. I also share the vegetable uttapam recipe, which is easy to make with the same batter. Ingredients
 

For batter

  • 2 cup wheat flour
  • ½ cup fine rava
  • ½ cup curd
  • Salt to taste
  • 2.25 cup water or as required

For instant masala dosa

  • 1.5 cup batter
  • 1 tbsp oil
  • ¼ tsp mustard seeds
  • ¼ tsp cumin seeds
  • ½ tsp urad dal
  • ½ tsp chana dal
  • 4-5 curry leaves
  • 1 chopped green chilli
  • ½ tsp grated ginger
  • ½ cup onion slice
  • ¼ tsp turmeric powder
  • 1 cup boiled and mashed potatoes
  • Salt to taste
  • Some coriander leaves
  • 1 tsp eno
  • 3 tbsp water to make a thin batter
  • Oil for making dosa

For instant uttapam

  • 1.5 cup batter
  • ½ cup chopped onion
  • ½ cup chopped tomatoes
  • ½ cup chopped capsicum
  • Salt to taste
  • Red chilli powder
  • Cumin powder
  • Some coriander leaves
  • Red chilli flakes - optional
  • Oil for making uttapam

Instructions

Making dosa batter

  • In a mixing bowl, add wheat flour, rava, curd, and salt. Add water gradually and make a thick batter.
  • Cover and rest the batter for 30 minutes.
  • Then divide the batter into 2 equal parts.

Making masala dosa

  • In a pan, add oil, mustard seeds, urad dal, chana dal, curry leaves, 2 chopped green chilli, 1 tsp ginger paste, 1 medium size onion slice, turmeric powder, salt, and boiled and mashed potatoes. Mix well.
  • Switch off the gas; add some coriander leaves. Mix well. The potato stuffing is ready.
  • In a dosa batter, add some water and make it slightly thin.
  • Add 1 tsp eno and water. Mix well.
  • Now heat, tawa and grease it with oil. Spread dosa batter with a ladle.
  • Sprinkle some coriander leaves on dosa.
  • when dosa becomes crisp, spread potato bhaji in the center of the dosa.
  • Fold the dosa and with chutney and sambhar.

Making instant vegetable uttapam

  • In a mixing bowl, add chopped onion, capsicum, tomatoes and salt. Mix well. Vegetable stuffing is ready.
  • Add 1 tsp eno and water. Mix well.
  • Now heat, tawa and grease it with oil. Spread the uttapam batter with a ladle.
  • Sprinkle some red chilli powder and jeera powder on it.
  • Spread vegetable stuffing, coriander leaves and red chilli flakes on uttapam and press it slightly.
  • Apply some oil to the sides of the uttapam.
  • Serve vegetable uttapam with chutney and sambar.

Notes

Recipe notes
For Batter
add fine rava into batter.
Rava gives crispiness to dosa.
rest dosa batter for 30 minutes, so rava and wheat flour are soaked properly.
For Dosa
  • sauté dal till its turns slightly golden brown.
  • dosa batter should have flowing consistency
  • lower the gas flame while spreading dosa.
  • cook dosa on medium-low flame.
for Uttapam
  • make thick and flowing batter for uttapam.
  • lower the temperature of tawa before you spread the uttapam.
  • cover and cook uttapam on medium-low flame.
