Papdi no lot | Gujarati papdi no lot | Gujarati khichu | 3 flavored gujarati khichu

Papdi no lot is popular Gujarati snacks made rice flour, water and regular spices. It is also known as Gujarati khichu. In this recipe I share regular, dry garlic chutney and green garlic chutney flavored papdi no lot. These three flavored are super tasty and easy to make without any complex ingredients required. It can be ideal breakfast recipe with pickle masala and oil. Do try this!

The key to making tasty patuda no lot  at home are
  • Firstly, papdi no lot made with rice flour with fine variety, do not use coarse rice flour for it. Also it is always best to use fresh rice flour while making it.
  • Also the quantity of water should be double than rice flour. it your flour is old you might need a little bit more water to make khichu.
  • i have added papad khar to make papdi no lot soft & fluffy which can be easily replaced with baking soda if you wish to. But i would heavily recommend do not use baking soda in more amount otherwise khichu (papdi no lot) become slightly yellow in color.
  • Papdi no lot tastes great when prepared slightly spicy and hot. The dish has to be served immediately once it is removed from stove.
  • Lastly, you can top it with oil and pickle masala just before serving. it is completely open-ended.

Ingredients
 

For papdi no lot

  • 4 cup water
  • 2 cup rice flour
  • 1 tsp carom seeds
  • 1 tbsp cumin seeds
  • Salt to taste
  • 5-6 green chilli paste - according to your taste
  • 2 tbsp oil
  • ½ papad khar - 1/2 tsp baking soda
  • Water for steaming

For dry garlic flavor papdi no lot

  • 10-12 garlic cloves
  • 3 tbsp peanuts
  • 2 tbsp kashmiri red chilli powder
  • Salt to taste
  • 1 tbsp oil
  • Some coriander leaves
  • Khichu - papdi na lot pieces

For green garlic chutney

  • 5-6 green garlic cloves
  • ½ cup coriander leaves
  • 12-15 curry leaves
  • 3 green chilli - according to your taste
  • 1 inch ginger
  • Salt to taste
  • ½ tsp dry mango powder - amchur powder
  • 1 tbsp oil
  • Khichu - papdi na lot pieces

Instructions

Making papdi no lot

  • In a pan add 4 cup water.
  • When water become boil, add cumin seeds, carom seeds, green chilli paste, salt, oil and papad khar. Traditionally papa khar is added, but you can replace it with baking soda.
  • Mix well and get water to boill for 2-3 minutes.
  • Then add 2 cup rice flour and stir well with wooden sticks.
  • Stir continuously until the wheat flour absorbs all the water.
  • Take out into big bowl, and break the lumps and form a soft and smooth mixture.
  • Grease your hand with oil and make small roundel from flour.
  • Now steam it in steamer for 20 minutes on medium flame.
  • Whean khichu is properly cooker than take out from steamer and cut it into small pieces.
  • Serve papdi no lot (khichu) with peanut oil, pickle masala and chaat masala.

Making dry garlic flavored papdi no lot

  • In a pan, add ½ tsp oil and add garlic cloves. Sauté for 2 mintes till it slightly golden brown.
  • Switch off and in a mixture jar, add roasted garlic cloves, roasted peanuts, red chilli powder and salt.
  • Without adding water, grind chutney into coarse damp powder. Dry garlic chutney is ready. Store it into air-tight container.
  • For making garlic flavoured papdi no lot, in a mixing bowl, add 1 tbsp oil, 1 tbsp garlic chutney, coriander leaves and khichu (papdi no lot) pieces. Mix well.
  • Garlic flavored papadi no lot is ready. serve hot.

Making green garlic flavoured papdi no lot.

  • In a mixute jar, add chopped green garlic, coriander leaves, ginger, green chilli, salt and dry mango powder. Without adding water grind it into coarse paste. Store it into air-tight container.
  • For making green garlic flavoured papdi no lot, in a mixing bowl, add 1 tbsp oil, 1 tbsp green garlic chutney and khichu (papdi no lot) pieces. Mix well.
  • Green Garlic flavored papadi no lot is ready. serve hot.

Notes

  • quantity of water should be double than rice flour.
  • boil water for 2-3 minutes so masala flavor absorb in it.
  • when flour is mixed with water than its texture should be crumbly.
  • steam papdi no lot on medium flame for 20 minutes.
  • papdi not lot taste great when it is serve hot.
