Kachumbar and sambharo recipe | sweet raw mango sambharo | gunda no sambharo | raw mango onion kachumbar | spicy raw mango kachumbar (takku)
Ingredients
For sweet raw mango sambharo
- 2 raw mango pieces
 - 2 tbsp oil
 - ยฝ tsp mustard seeds
 - ยผ tsp methi dana
 - ยฝ cup jaggery
 - Salt to taste
 - ยฝ tsp turmeric powder
 - 1 tsp red chilli powder
 
For gunda sambharo
- 250 grm gunda
 - ยผ cup roasted gram flour
 - ยฝ tsp turmeric powder
 - 3 tsp coriander powder
 - 1 tsp cumin powder
 - 1 tsp red chilli powder
 - Salt to taste
 - ยฝ tsp garam masala
 - ยฝ tsp amchur powder
 - 1 tsp sugar
 - 1.5 tbsp oil
 - 3 tbsp chopped coriander leaves.
 - 4 tbsp oil
 - 1 tsp mustard seeds
 - Pinch of hing
 - ยฝ lemon juice
 
For raw mango onion kachumbar
- 1 raw mango
 - 2 small size onion
 - Salt to taste
 - ยฝ tsp red chilli powder
 - ยฝ tsp cumin powder
 - 1 tbsp sugar or jaggery
 
For spicy raw mango kachumbar
- 1 shredded raw mango
 - Salt to taste
 - 1 tbsp red chilli powder
 - 2 tbsp oil
 - 1 tsp mustard seeds
 - ยฝ tsp hing
 - 1 tsp turmeric powder
 - 1 tbsp jaggery
 - 2 tsp crushed peanut powder
 
Instructions
Making sweet raw mango sambharo
- Peel and cut the mango into medium size pieces.
 - Heat oil in a pan, add mustard seeds and methi dana. Sautรฉ for a minute.
 - Add mango pieces, turmeric powder and salt.
 - Mix well and cook till mango pieces become soft.
 - Add red chilli powder and mix well.
 - Now add jaggery and cook till jaggery is completely dissolved.
 - Switch off the flame and serve sweet mango sambharo with thepla and puri.
 
For gunda sambharo
- Remove seeds and stickiness of gunda with salt.
 - Now in a mixing bowl, add roasted gram flour, turmeric powder, coriander powder, roasted jeera powder, red chilli powder, salt, garam masala, amchur powder, sugar, coriander leaves, and oil. Mix well.
 - Now stuffed masala into gunda and keep it aside.
 - Heat oil in a pan, add mustard seeds and hing. Sautรฉ for a minute.
 - Add stuffed gunda and mix well.
 - Cover and cook till the gunda becomes soft.
 - Then add leftover masala on gunda and cook it for 1 minute. Mix well.
 - Switch off the gas and add lemon juice to it.
 
Making raw mango onion kachumbar
- In a mixing bowl, add chopped mango and onion pieces.
 - Then add salt, red chilli powder, cumin powder and sugar.
 - Mix well and serve mango onion kachumbar.
 
Making spicy raw mango kachumbar
- Grate mango into thin slices. Add salt and mix well.
 - Add red chilli powder to a bowl.
 - Now heat oil in a pan, add mustard seeds, hing and turmeric powder. Sautรฉ for a minute.
 - Add tadka on the red chilli powder and mix well.
 - Mix masala into raw mango shredded.
 - Then add jaggery and peanut powder. Mix well.
 
Notes
- raw mango jaggery sambharo
 - cook raw mango till it becomes slightly soft.
 - Gunda no sambharo
 - with the help of salt removes the stickiness of Gunda.
addition of lemon juice enhances the flavor of Gunda sambharo.
