Ingredients
  

For sweet raw mango sambharo

  • 2 raw mango pieces
  • 2 tbsp oil
  • ½ tsp mustard seeds
  • ¼ tsp methi dana
  • ½ cup jaggery
  • Salt to taste
  • ½ tsp turmeric powder
  • 1 tsp red chili powder

For gunda sambharo

  • 250 gram gunda
  • ¼ cup roasted gram flour
  • ½ tsp turmeric powder
  • 3 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • Salt to taste
  • ½ tsp garam masala
  • ½ tsp amchur powder
  • 1 tsp sugar
  • 1.5 tbsp oil
  • 3 tbsp chopped coriander leaves.
  • 4 tbsp oil
  • 1 tsp mustard seeds
  • Pinch of hing
  • ½ lemon juice

For raw mango onion kachumbar

  • 1 raw mango
  • 2 small size onion
  • Salt to taste
  • ½ tsp red chili powder
  • ½ tsp cumin powder
  • 1 tbsp sugar or jaggery

For spicy raw mango kachumbar

  • 1 shredded raw mango
  • Salt to taste
  • 1 tbsp red chili powder
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • ½ tsp hing
  • 1 tsp turmeric powder
  • 1 tbsp jaggery
  • 2 tsp crushed peanut powder

Instructions
 

Making sweet raw mango sambharo

  • Peel and cut mango into medium size pieces.
  • Heat oil in a pan, add mustard seeds and methi dana. Sauté for a minute.
  • Add mango pieces, turmeric powder, and salt.
  • Mix well and cook till mango pieces become soft.
  • Add red chili powder and mix well.
  • Now add jaggery and cook till jaggery is completely dissolved.
  • Switch off the flame and serve sweet mango sambharo with thepla and puri.

For gunda sambharo

  • Remove seeds and stickiness of gunda with salt.
  • Now in a mixing bowl, add roasted gram flour, turmeric powder, coriander powder, roasted jeera powder, red chili powder, salt, garam masala, amchur powder, sugar, coriander leaves and oil. Mix well.
  • Now stuffed masala into gunda and keep it aside.
  • Heat oil in a pan, add mustard seeds and hing. Sauté for a minute.
  • Add stuffed gunda and mix well.
  • Cover and cook till gunda become soft.
  • Then add leftover masala on gunda and cook it for 1 minute. Mix well.
  • Switch off the gas and add lemon juice to it.

Making raw mango onion kachumbar

  • In a mixing bowl, add chopped mango and onion pieces.
  • Then add salt, red chili powder, cumin powder, and sugar.
  • Mix well and serve mango onion kachumbar.

Making spicy raw mango kachumbar

  • Grate mango into thin slices. Add salt and mix well.
  • Add red chili powder in a bowl.
  • Now heat oil in a pan, add mustard seeds, thing, and turmeric powder. Sauté for a minute.
  • Add tadka on red chili powder and mix well.
  • Mix masala into raw mango shredded.
  • Then add jaggery and peanut powder. Mix well.

Notes

raw mango jaggery sambharo
  • cook raw mango till it become slightly soft.
Gunda no sambharo
  • with the help of salt remove the stickiness of Gunda.
  • addition of lemon juice enhance the flavor of Gunda sambharo.
