Dudhi nashta recipe | lauki besan nashta | lauki ka chilla | bottle gourd pancakes

Dudhi nashta is an easy and tasty snack recipe made with bottle gourd (lauki), chickpea flour semolina, and regular spices. it is one of the healthy snack recipes which can be enjoyed for all parts of days meal including for kids and teenagers. the recipe can be easily served as it is without any side dish but tastes great when served with a choice of spicy chutney or sauce. Ingredients
 

For lauki paste

  • 1 cup lauki pieces
  • ½ cup coriander leaves
  • 3 garlic cloves
  • 1 inch ginger
  • 3 green chilli
  • ½ tsp cumin seeds
  • Salt to taste
  • ½ cup chilled water

For lauki nashta

  • 1 cup lauki paste
  • 1 cup gram flour
  • ¼ cup semolina - coarse rava
  • ¼ cup curd
  • Pinch of hing
  • ¼ tsp turmeric powder
  • ½ tsp ajwain
  • Salt to taste
  • ¼ tsp baking soda
  • ½ tsp lemon juice
  • ¼ cup water or as required

For lauki pizza

  • Lauki nashta or pancakes
  • Pizza sauce
  • Onion slices
  • Green and red capsicum slices
  • Corn kernels
  • Grated cheese
  • Chilli flakes
  • Oregano

Instructions

Making lauki nashta

  • Peel and cut lauki into pieces.
  • In a mixture jar, add lauki pieces, ginger, coriander leaves, garlic cloves, green chilli, cumin seeds, salt and required water. grind into a smooth paste.
  • Now in a mixing bowl, add lauki paste, besan, semolina, curd, hing, turmeric powder, ajwain and salt. Mix well.
  • Add water gradually and make a thick and flowing better.
  • Cover and rest for 15 minutes or until the semolina absorb water well.
  • Then add baking soda and lemon juice. Mix well. The batter becomes fluffy.
  • Heat oil in a pan; sprinkle some white sesame seeds in a pan.
  • Add batter and spread it evenly.
  • Cook for 5 minutes on low-medium flame or until the base gets cooked well.
  • Now flip over and cook base for 3-4 minutes.
  • lauki ka nashta is ready to serve with tomato ketchup.

For lauki pizza.

  • Heat oil in pan; sprinkle some white sesame seeds in a pan.
  • Add batter and spread it evenly.
  • Cook for 5 minutes on low-medium flame or until the base gets cooked well.
  • Now flip over and spread some pizza sauce, onion slices, capsicum slices, corn kernels, grated cheese, chili flakes and oregano.
  • When the base is properly cooked and the cheese melts, then serve pizza immediately.

Notes

  • add some cold water, so dudhi will not turn black while grinding it.
  • use coarse rava for nashta.
  • the mixture should have a slightly thick but flowing consistency.
  • baking soda gives fluffiness to nashta.
  • cook nashta on low-medium flame.
