Methi aloo paratha & stuffed fried chillis

Methi aloo paratha is a stuffed paratha made with whole wheat flour and methi leaves dough stuffed with spicy potato filling. I also share stuffed fried chili recipes that taste great with paratha. It is usually made for breakfast and sometimes lunch and dinner also.

Generally, the recipe of stuffed paratha recipe varies from house to house. But I share the very basic recipe for stuffed paratha. I grate boiled potatoes mixed with spices and stuffed them into the wheat-methi dough, gently roll it, and roast in ghee. In my recipe, I saw 3 ways of the rolling method of methi aloo paratha. Hence it should be a fairly easy recipe for most of them.

The key to making tasty methi aloo paratha at home are:
  • Firstly, I made dough with wheat flour combined with chopped methi leaves. You can also make this recipe with maida or plain flour or half of the wheat flour and half of maida but it is healthier with just wheat flour.
  • Also, paratha dough should be soft and smooth, do not knead tight dough because it is not easily stretched while rolling paratha.
  • take extra precautions while preparing the potato or aloo stuffing. It has to be moist but at the same time does not make it watery. You may not be able to stuff it and eventually you may not be able to roll too. Then add some dry poha powder into stuffing, so it will absorb water and make stuffing dry.
  • Lastly, you can apply either ghee or oil while roasting. Also roast paratha on a medium flame for the crispy outer layer.
