Sitda satam special thali recipe |How to make Gujarati thali | thali recipe

Ingredients
 

Bajri na vada

  • 1 cup bajra flour
  • ¼ cup wheat flour
  • 1 tbsp red chilli powder
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • 2 tsp jaggery
  • ½ tsp garam masala
  • 2 tsp sesame seeds
  • ½ tsp ajwain
  • 2 tsp green chilli paste
  • Salt to taste
  • 3 tbsp oil
  • 1 cup fenugreek leaves
  • ¼ cup buttermilk

Coriander green chilli chutney

  • ¾ cup coriander leaves
  • 2 green chilli
  • 2 tbsp grated coconut
  • Salt to taste
  • ½ tsp sugar
  • 1 tsp lime juice
  • Water as required

Mix fruit raita

  • 1.5 cup hung curd
  • 2 tbsp sugar
  • ¼ tsp black salt
  • ¼ tsp black pepper powder
  • Salt to taste
  • ½ cup chopped banana
  • ½ cup chopped apple
  • ¼ cup pomegranate seeds

Dry potato sabji

  • 3 tbsp oil
  • ½ tsp mustard seeds
  • ½ tsp cumin seeds
  • 1 bay leaf
  • 1 dry red chilli
  • 2 tbsp peanuts
  • 2 medium sized boiled potatoes
  • ½ tsp turmeric powder
  • ½ tsp coriander powder
  • ½ tsp red chilli powder
  • ½ tsp garam masala powder
  • Water to sprinkle
  • 1 tsp lemon juice
  • Coriander leaves

Mung sabji

  • 2 tbsp oil
  • ½ tsp cumin seeds
  • ¼ tsp asafetida
  • ½ tsp ginger paste
  • 1 chopped green chilli
  • ½ tsp turmeric powder
  • 1 tsp coriander powder
  • ½ tsp red chilli powder
  • Salt to taste
  • Water to sprinkle
  • 1 tsp lemon juice
  • Coriander leaves

Dudhi halwa

  • 1 medium size lauki - dudhi
  • 1 cup grated lauki
  • 2 tbsp ghee
  • 1 tbsp cashew
  • 1 tbsp almonds
  • 1 tbsp raisins
  • 1 cup milk
  • ¼ cup sugar
  • ¼ cup mawa
  • ½ tsp cardamom powder
  • Pinch of green food color

Thepla

  • 2 cup wheat flour
  • 2-3 tbsp besan
  • ½ tsp turmeric powder
  • Salt to taste
  • 2 tsp oil
  • 3 tbsp curd
  • ½ cup water
  • 1 tsp Oil

Instructions

Bajri na vada

  • In a mixing bowl, add bajri flour, wheat flour, red chilli powder, turmeric powder, coriander powder, garam masala, jaggery, salt, sesame seeds, ajwain, green chilli paste and methi leaves. Mix well.
  • Take ¼ buttermilk and knead the semi-soft dough.
  • Grease your hand with oil. Take a small portion of dough and flatten it out between your hand.
  • Heat oil in a pan, add vada and fry them on medium flame. Flip it in between for even browning.
  • When it is crispy and golden brown from both sides. Remove it to the paper towel-lined plate using a slotted spatula.
  • Serve vada with coriander chutney.

Coriander green chilli chutney

  • In a grinding jar, add coriander leaves, green chilli, grated coconut, salt, sugar and lemon juice. Grind into a smooth paste
  • Remove it to the bowl and serve

Mix fruit raita

  • In a mixing bowl, take yogurt. Then add black salt, black pepper and salt to taste. Mix well.
  • Sieve the curd mixture for a smooth texture.
  • Then add banana, apples and pomegranate seeds. Mix well.
  • Serve chilled mix fruit raita with thepla

Dry potato sabzi

  • In a pan, add oil, mustard seeds, cumin seeds, bay leaf, dry red chilli and peanuts. Sauté it.
  • Then add boiled potatoes and all spices. Sprinkle some water and cook the mixture on low flame for 2 minutes.
  • Switch off the flame. Then add lemon juice and coriander leaves.
  • Serve hot dry potato sabji with thepla.

Mug sabzi

  • In a pan, add oil cumin seeds, asafetida, ginger paste, and chopped green chilli and sauté it.
  • Add turmeric powder, boiled mug beans, coriander powder and red chilli powder. Mix well.
  • Sprinkle some water close the lid and cook the mixture for 2 minutes.
  • Switch off the gas and lemon juice and coriander leaves.
  • Serve mug sabzi with thepla and raita.

Lauki halwa

  • Peel and remove seed from lauki (dudhi). Then grate lauki with grater.
  • Heat ghee in a pan. Add cashew, almonds, and raisins and sauté it. keep it aside.
  • Now add grated lauki. Sauté till lauki becomes soft.
  • Add milk and stir continuously till it completely absorbs in lauki.
  • Add sugar and mix well.
  • Then add mawa, cardamom powder and a pinch of green food colour. Mix well.
  • Then roasted dry fruits and mix well.
  • Allow it to cool down and serve.

Thepla

  • In a mixing bowl, add wheat flour, besan, turmeric powder, salt, oil and curd. Mix well.
  • Add water gradually and knead soft dough.
  • Take a small portion of the dough and coat it with dry flour.
  • Roll round shape thepla with a rolling pin.
  • Heat tawa on medium flame. Place thepla on the griddle and cook on medium-high heat for half a minute and flip it.
  • Brush  it with oil and flip again till slightly brown spots appear on it.
  • Serve the delicious thepla with yogurt raita.

Notes

  • Store all food items in an airtight container.
