Bajri methi na vada | how to make bajra vada | pearl millet flour fritters
Ingredients
- 1 cup bajra flour
- ¼ cup wheat flour
- 1 tbsp red chilli powder
- ½ tsp turmeric powder
- 1 tsp coriander powder
- 2 tsp jaggery
- ½ tsp garam masala
- 2 tsp sesame seeds
- ½ tsp ajwain
- 2 tsp green chilli paste
- Salt to taste
- 2 tbsp oil
- 1 cup fenugreek leaves
- ¼ cup coriander leaves
- ¼ cup curd - yogurt
- ¼ tsp baking soda
- Water as required
Instructions
- In a mixing bowl, add bajri flour, wheat flour, red chilli powder, turmeric powder, coriander powder, garam masala, jaggery, salt, sesame seeds and ajwain. Mix well
- Add garlic paste, green chili paste, methi leaves and coriander leaves. mix well
- Then add curd and mix well. The mixture starts to bind.
- Now add baking soda and the required water to make a semi-soft dough.
- Grease your hand with oil. Take a small portion of dough and flatten it out between your hand.
- Heat oil in a pan, add vada, and fry them on medium flame. Flip it in between for even browning.
- When it is crispy and golden brown from both sides. Remove it to the paper towel-lined plate using a slotted spatula.
- Serve vada with coriander chutney.
Notes
- Use fresh fenugreek and coriander leaves for vada.
- Yogurt or buttermilk gives softness to vada.
- Fry vada on medium flame.
