Bhakhri pizza | how to make bhakhri pizza | tandoori bhakhri pizza

Bhakhri pizza is easy and tasty pizza recipe where regular pizza base is replaced with Bhakri – Indian Wheat Flour Flat Bread. Bhakri is traditionally made in Gujarat and Maharashtra and also in Rajasthan.  It is thick roti and is very crispy and cooked slowly. We can call this healthier version of Pizza owing to use of Wheat Flour Base. In this recipe I share 2 variety of pizza, one is regular and another is tandoori bhakhri pizza. Both are loved by kids and good to go for parties too. Do try this!

The key to making tasty bhakhri pizza at home are
  • Firstly, for bhakhri pizza base, Proportion of wheat flour and coarse wheat flour should be equal. You can also use rava instead of coarse wheat flour.
  • Secondly, roll bhakhri into medium thick and small in size. Also cook bhakhri pizza base on medium-low flame till it become crispy and slightly golden brown from both the sides.
  • Lastly, pizza topping is completely open-ended and you may choose any type of combination of toppings as per your choice.

Ingredients
 

For bhakhri pizza base

  • ½ cup wheat flour
  • ½ cup coarse wheat flour
  • Salt to taste
  • 4 tbsp oil
  • ½ cup water

For instant pizza sauce

  • ½ cup tomato sauce
  • ¼ cup red chilli sauce
  • 1 tsp chilli flakes
  • 1 tsp mixed herbs - oregano

For vegetable bhakhri pizza

  • Bhakhri pizza base
  • pizza sauce
  • grated cheese
  • onion slices
  • small pieces of tomato - capsicum and onion
  • some boiled sweet corn
  • red chilli flakes
  • oregano

for tandoori sauce

  • 1 tbsp oil
  • 2 tbsp Kashmiri red chilli powder
  • 1 tsp jeera powder
  • 1 tbsp dhaniya powder
  • ½ tsp garam masala
  • 1 tsp amchur powder
  • ½ tsp black salt
  • ½ tsp kasuri methi
  • 1 tbsp ginger garlic paste
  • 5 tbsp hung curd - thick yogurt
  • 2 tbsp mayonnaise
  • Salt to taste
  • Hot charcoal + ¼ tsp ghee

For tandoori pizza topping

  • ½ cup chopped tomatoes
  • ½ cup chopped capsicum
  • ½ cup chopped onion
  • 1 cup paneer cubes
  • ½ tsp chaat masala
  • 1 tsp red chilli powder
  • 1 tsp lemon juice
  • 1 tbsp fresh coriander leaves

For tandoori pizza

  • Bhakhri pizza base
  • Tomato sauce
  • Tandoori sauce
  • grated cheese
  • tandoori pizza topping

Instructions

Making bhakhri pizza base

  • In a mixing bowl, add wheat flour, coarse wheat flour and salt.
  • Add oil and mix everything into flour.
  • Now add water gradually and knead tight dough.
  • Cover and rest dough for 10 minutes.
  • Now divide the dough into equal portions. Roll out each portion and cut it into a 4 inch diameter circle. Then prick rolled bhakhri with fork.
  • Place the rolled bhakhri on the heated tawa on low-medium heat.
  • cook each rolled portion of the bhakri dough on both sides until slightly golden brown, putting light pressure using kitchen towel or a wooden press, so the insides cook evenly.
  • Bhakhri pizza base is ready, keep it aside.

Making instant pizza sauce

  • In a mixing bowl, add tomato sauce, red chilli sauce, red chilli flakes and oregano. Mix well.
  • Instant pizza sauce is ready.

Making vegetable bhakhri pizza

  • On hot Tawa, spread some butter and roast bhakhri pizza for 2 minutes.
  • Now lower the flame, and on pizza base apply some pizza sauce, spread some cheese, onion slices, tomato, capsicum, onion pieces and some sweet corn.
  • Sprinkle some cheese, chilli flakes and oregano.
  • Cover and cook pizza on low flame till cheese is completely melt and pizza base become crispy.
  • Serve vegetable bhakhri pizza with tomato sauce.

Making tandoori sauce.

  • In a mixing bowl, add oil and kashmiri red chilli powder, mix well to bleed the natural red colour, further add the remaining powdered spices, ginger garlic paste, thick curd, mayonnaise & salt to taste, mix well.
  • Further smoke the sauce for 2-3 minutes by pouring ghee over live charcoal, discard the coal and mix the ghee with the sauce, your tandoori sauce is ready, keep aside to be used later in making the pizza.

Making tandoori pizza topping

  • In a mixing bowl, add chopped tomatoes, capsicum, onion, paneer, chaat masala, red chilli powder, lemon juice and fresh coriander leaves. mix well.
  • Tandoori pizza topping is ready.

Making tandoori bhakhri pizza

  • On hot tawa, spread some butter and roast bhakhri pizza for 2 minutes.
  • Now lower the flame, and on pizza base apply some tomato sauce and tandoori sauce.
  • Then add grated cheese and tandoori topping.
  • Sprinkle some cheese. Cover and cook pizza on low flame till cheese is completely melt and pizza base become crispy.
  • Serve tandoori bhakhri pizza with your choice of dip.

Notes

For bhakhri pizza base
  • proportion of wheat flour and coarse wheat flour should be equal.
  • flour should have crumbly texture and hold shape between hands.
  • rest dough for 10-15 minutes, so it will set properly.
  • thickness of bhakhri should be medium.
  • cook bhakhri pizza base on low flame.
for bhakhri pizza
  • cook pizza on low flame, so cheese melts properly.
