Ingredients
 

To boil tuvar dana

  • 250 grm or 1.5 cup fresh tuvar dana
  • 2 cup water
  • Salt to taste
  • ¼ tsp turmeric powder
  • ¼ tsp sugar

for green masala

  • ¼ cup white part of green garlic
  • ½ cup fresh coconut
  • ½ cup chopped coriander leaves
  • 3 green chilli
  • 1 inch ginger
  • 3 tbsp coarse peanut powder
  • 2 tbsp coarse white sesame seeds
  • ¼ tsp turmeric powder
  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • Salt to taste

For tuvar dana shak

  • 4 tbsp oil
  • ½ tsp ajwain
  • Pinch of hing
  • ½ tsp cumin seeds
  • ½ tsp garlic paste
  • ½ tsp ginger paste
  • 1 tbsp green chilli paste
  • Boiled tuvar dana
  • Green masala paste
  • ½ cup water
  • ¼ tsp garam masala
  • 2 tsp sugar
  • ¼ cup chopped coriander leaves
  • ¼ cup chopped green garlic
  • 1 tsp lemon juice

Instructions

  • In a pan, boil 2 cups of water and add fresh tuvar dana, salt, turmeric powder and sugar. Boil tuvar dana till it becomes soft.
  • In a mixture jar, add the white part of green garlic, fresh coconut, chopped coriander leaves, green chilli and ginger. Add little water and grind it into a smooth paste.
  • Add grinded paste into mixing bowl, also add coarse peanut powder, coarse white sesame powder, turmeric powder, coriander powder, cumin powder and salt. Mix well. The green paste is ready.
  • Heat oil in pan, add ajwain, hing and cumin seeds. Sauté for a minute.
  • Then add garlic paste, ginger paste and green chilli paste. Sauté it.
  • Add boiled tuvar dana and sauté in oil for 2-3 minutes.
  • Now add the green masala paste and mix well.
  • Add ½ water and cover and cook shak for 2-3 minutes till oil separates from the masala.
  • Then add garam masala, sugar, coriander leaves and a green part of green garlic. Mix well.
  • Switch off the flame and add lemon juice. Mix well
  • Serve lili tuvar nu shak with roti or paratha and salad.

Notes

  • add sugar while boiling tuvar dana helps to retain its green color.
  • boil green tuvar dana on medium flame.
  • cover and cook gravy till oil separates.
  • sugar gives a nice flavor to shaak.
